  • 3 large eggs

  • 1 green onion, finely diced

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

  • 3 tablespoons hot sauce (adjust based on spice preference)

  • ½ cup cooked chicken, chopped (grilled or rotisserie chicken works well)

  • ½ cup shredded cheddar cheese


Instructions

  1. Preheat the Oven: Begin by preheating your oven to 375°F (190°C). This temperature will help the quiche cook evenly while crisping the tortilla base.

  2. Prepare the Tortilla Crust: Lightly grease a small pie dish or oven-safe skillet. Gently press the low-carb tortilla into the dish, molding it to fit the bottom and sides. This will form the crust for your quiche.

  3. Mix the Egg Filling: In a medium-sized mixing bowl, whisk together the eggs, cottage cheese, salt, black pepper, and hot sauce. Whisk until the mixture is smooth and creamy.
