Ingredients

- 2 tablespoons butter
- 1 clove minced garlic
- 1 pound 80% lean ground beef
- Salt and pepper, to taste
- 10 ounces sliced mushrooms
- 2 tablespoons water
- 1 ¼ cups sour cream
- ½ teaspoon paprika
- 1 tablespoon fresh lemon juice
- 1 tablespoon fresh chopped parsley
Instructions
- In a large skillet, melt the butter over medium heat.
- Add the garlic and cook until fragrant, about 1 minute.
- Add the ground beef, season with salt and pepper, and cook until browned.
- Add the mushrooms and cook until softened, about 5 minutes.
- Stir in the water and sour cream, then add the paprika.
- Simmer for 10 minutes, stirring occasionally.
- Add the lemon juice and parsley before serving.
Notes
Serve with cauliflower rice or zucchini noodles for a complete keto meal.
