Lasagna Soup

Description

 A cozy, one-pot meal with all the flavors of classic lasagna in a hearty soup form. Perfect for busy weeknights and family dinners.


Ingredients

  • 1 pound ground beef

  • 1 small onion, diced

  • 1 green bell pepper, diced

  • 3 cloves garlic, minced

  • 1 tablespoon olive oil

  • 2 tablespoons tomato paste

  • 1 can (28 oz) crushed tomatoes

  • 6 cups beef broth

  • 2 teaspoons Italian seasoning

  • 1 teaspoon salt (adjust to taste)

  • 1/2 teaspoon black pepper

  • 1/2 teaspoon red pepper flakes (optional)

  • 8 oz lasagna noodles, broken into pieces

  • 1 cup ricotta cheese

  • 1 cup shredded mozzarella cheese

  • 1/2 cup grated Parmesan cheese

  • Fresh basil or parsley, for garnish


Instructions

  1. Stir in garlic and cook for 1 minute until fragrant. Add Italian seasoning, salt, pepper, and red pepper flakes if using.

  2. Mix in tomato paste, crushed tomatoes, and beef broth. Bring to a boil, then reduce heat and simmer for 20 minutes.

  3. Add broken lasagna noodles to the pot. Simmer for 10–12 minutes, stirring occasionally, until pasta is al dente.

  4. In a small bowl, mix ricotta, mozzarella, and Parmesan. Ladle soup into bowls and top each serving with a spoonful of the cheese mixture. Garnish with fresh herbs before serving.

Notes

 For best leftovers, cook pasta separately and add it when reheating to prevent sogginess. This soup also freezes well without the pasta—just add fresh noodles when serving.
