Lazy Girl Enchilada Skillet made with taquitos, enchilada sauce, and melty cheese—an easy, cozy one-pan dinner everyone loves.

- 22.5 oz box frozen beef & cheese taquitos
- 10 oz can enchilada sauce
- 4 oz can mild diced green chiles
- 8 oz block Colby jack cheese, shredded
- 1 tbsp fresh cilantro, chopped
Instructions
- Heat a large oven-safe skillet over medium heat.
- Arrange the frozen taquitos in the skillet in a single layer.
- Pour the enchilada sauce evenly over the taquitos.
- Sprinkle the diced green chiles over the top.
- Cover the skillet with a lid or foil and cook for 10–12 minutes, allowing the taquitos to heat through and soften.
- Remove the lid and sprinkle the shredded Colby jack cheese evenly over the skillet.
- Cover again and cook for another 5–7 minutes, until the cheese is fully melted and bubbly.
- Remove from heat and garnish with fresh chopped cilantro.
- Serve hot directly from the skillet.
Notes
Use mild or spicy enchilada sauce depending on your heat preference.
If taquitos start sticking, add a few tablespoons of water or sauce.
Serve with sour cream, salsa, or guacamole if desired.
