Lazy Girl Enchilada Skillet made with taquitos, enchilada sauce, and melty cheese—an easy, cozy one-pan dinner everyone loves.


Ingredients

  • 22.5 oz box frozen beef & cheese taquitos
  • 10 oz can enchilada sauce
  • 4 oz can mild diced green chiles
  • 8 oz block Colby jack cheese, shredded
  • 1 tbsp fresh cilantro, chopped

Instructions

  1. Heat a large oven-safe skillet over medium heat.
  2. Arrange the frozen taquitos in the skillet in a single layer.
  3. Pour the enchilada sauce evenly over the taquitos.
  4. Sprinkle the diced green chiles over the top.
  5. Cover the skillet with a lid or foil and cook for 10–12 minutes, allowing the taquitos to heat through and soften.
  6. Remove the lid and sprinkle the shredded Colby jack cheese evenly over the skillet.
  7. Cover again and cook for another 5–7 minutes, until the cheese is fully melted and bubbly.
  8. Remove from heat and garnish with fresh chopped cilantro.
  9. Serve hot directly from the skillet.

Notes

Use mild or spicy enchilada sauce depending on your heat preference.

If taquitos start sticking, add a few tablespoons of water or sauce.

Serve with sour cream, salsa, or guacamole if desired.
