These Lemon Pepper Chicken Skewers are spicy, zesty, and juicy—perfect for grilling season or weeknight dinners.


Ingredients

For the Skewers:

  • Wooden skewers (soaked in water for 30 minutes)
  • 2 pounds boneless, skinless chicken breasts, cut into 1-inch cubes
  • 2 tablespoons extra virgin olive oil
  • ½ teaspoon paprika
  • ½ teaspoon kosher salt
  • ½ teaspoon lemon pepper
  • ½ teaspoon garlic, minced
  • 1 ½ teaspoons Cajun seasoning

For the Seasoned Butter:

  • ¼ cup (½ stick / 57 g) unsalted butter, melted
  • ½ teaspoon paprika
  • ½ teaspoon lemon pepper
  • ½ teaspoon garlic, minced
  • 1 ½ teaspoons Cajun seasoning
  • 1 teaspoon freshly chopped parsley

Instructions

  1. Soak the Skewers
    Soak wooden skewers in water for at least 30 minutes to prevent burning on the grill. If using metal skewers, skip this step.
  2. Prepare the Chicken Marinade
    In a large bowl, combine olive oil, paprika, salt, lemon pepper, minced garlic, and Cajun seasoning. Add the cubed chicken and toss well to coat. Cover and marinate in the fridge for at least 30 minutes, up to 2 hours.
  3. Skewer the Chicken
    Thread the marinated chicken pieces onto the soaked skewers, spacing evenly and not overcrowding.
  4. Make the Seasoned Butter
    In a small bowl, whisk together melted butter, paprika, lemon pepper, garlic, Cajun seasoning, and parsley. Set aside.
  5. Grill the Skewers
    Preheat your grill or grill pan to medium-high heat. Lightly oil the grates or pan.
    Place the chicken skewers on the grill and cook for 10–12 minutes, turning occasionally to ensure even cooking. Brush with seasoned butter during the last 5 minutes of cooking.
  6. Serve
    Once cooked through and nicely charred, remove skewers from the grill. Brush with any remaining seasoned butter and serve immediately.

Notes

Chicken thighs can be used instead of breasts for juicier results.

Want more spice? Increase the Cajun seasoning or add crushed red pepper.

For oven cooking: bake at 425°F (220°C) for 20–25 minutes, flipping halfway.

Pairs beautifully with rice, salad, or flatbread.
