For the Fries

  • 1 pound frozen French fries

For the Garlic Cheese Sauce

  • 1 tablespoon unsalted butter ( stick)
  • 2 cloves garlic, minced
  • 1 tablespoon all-purpose flour
  • ¾ cup whole milk
  • 6 ounces medium cheddar cheese, freshly grated
  • ⅛ teaspoon ground cayenne pepper
  • Kosher salt and freshly ground black pepper, to taste

Optional Toppings

  • Thinly sliced green onion
  • Diced jalapeño peppers
  • Bacon crumbles

Instructions

  1. Bake the Fries
    Preheat your oven and bake the frozen fries according to package instructions until crispy and golden brown. You can also use an air fryer for extra crispness.
  2. Make the Roux
    In a medium saucepan over medium heat, melt the butter. Add the minced garlic and sauté for about 30 seconds, until fragrant.
  3. Add the Flour
    Stir in the flour and cook, whisking constantly, for 1–2 minutes. This forms the base of your cheese sauce and helps it thicken properly.
  4. Pour in the Milk
    Slowly whisk in the milk. Bring to a simmer and cook for 2–3 minutes, stirring constantly, until the mixture thickens.
  5. Add the Cheese
    Reduce the heat to low and add the shredded cheddar cheese a little at a time, whisking until smooth and melted.
  6. Season the Sauce
    Stir in cayenne, salt, and pepper to taste. Adjust seasoning as needed and remove from heat once smooth.
  7. Assemble the Cheese Fries
    Place hot fries on a serving dish or platter. Pour the cheese sauce generously over the top. Sprinkle with optional toppings like bacon, jalapeños, and green onions.
  8. Serve Immediately
    Cheese fries are best enjoyed hot and fresh with lots of napkins and happy friends around.

Notes

Freshly grated cheese melts better and gives a smoother sauce—avoid pre-shredded cheese if possible.

Feel free to use a blend of cheeses (e.g., cheddar and Monterey Jack) for added flavor.

For crispier fries, bake them slightly longer than the package suggests.

Want a spicier kick? Add hot sauce or extra cayenne to the cheese sauce.
