- ¾ cup whole milk
- 6 ounces medium cheddar cheese, freshly grated
- ⅛ teaspoon ground cayenne pepper
- Kosher salt and freshly ground black pepper, to taste

Instructions
- Bake the Fries
Preheat your oven and bake the frozen fries according to package instructions until crispy and golden brown. You can also use an air fryer for extra crispness. - Make the Roux
In a medium saucepan over medium heat, melt the butter. Add the minced garlic and sauté for about 30 seconds, until fragrant. - Add the Flour
Stir in the flour and cook, whisking constantly, for 1–2 minutes. This forms the base of your cheese sauce and helps it thicken properly. - Pour in the Milk
Slowly whisk in the milk. Bring to a simmer and cook for 2–3 minutes, stirring constantly, until the mixture thickens. - Add the Cheese
Reduce the heat to low and add the shredded cheddar cheese a little at a time, whisking until smooth and melted. - Season the Sauce
Stir in cayenne, salt, and pepper to taste. Adjust seasoning as needed and remove from heat once smooth. - Assemble the Cheese Fries
Place hot fries on a serving dish or platter. Pour the cheese sauce generously over the top. Sprinkle with optional toppings like bacon, jalapeños, and green onions. - Serve Immediately

Notes
Freshly grated cheese melts better and gives a smoother sauce—avoid pre-shredded cheese if possible.
Feel free to use a blend of cheeses (e.g., cheddar and Monterey Jack) for added flavor.
