Loaded Potato & Meatloaf Casserole

Description

A hearty layered casserole with juicy meatloaf, creamy mashed potatoes, melted cheddar, and crispy bacon. Perfect for family dinners or gatherings.


Ingredients

  • 1.5 pounds ground beef

  • 1 onion, finely chopped

  • 2 cloves garlic, minced

  • 1 cup breadcrumbs

  • 1/2 cup milk

  • 1 large egg

  • 1 tablespoon Worcestershire sauce

  • 1/4 cup ketchup

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

  • 2 pounds potatoes, peeled and cubed

  • 4 tablespoons butter

  • 1/2 cup milk (for potatoes)

  • 1/4 cup sour cream

  • 1 1/2 cups shredded cheddar cheese

  • 6 slices bacon, cooked and crumbled

2 tablespoons chopped green onions


Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.

  2. In a large bowl, combine ground beef, onion, garlic, breadcrumbs, milk, egg, Worcestershire sauce, ketchup, salt, and pepper. Mix gently until combined.

  3. Spread meat mixture evenly into the prepared dish. Cover with foil and bake for 30–35 minutes until mostly cooked.

  4. Meanwhile, boil potatoes in salted water until fork-tender. Drain and mash with butter, milk, sour cream, salt, and pepper until smooth.

  5. Spread mashed potatoes over the baked meatloaf. Sprinkle with cheddar cheese and return to oven for 15 minutes, uncovered, until cheese melts and bubbles.

  6. Remove from oven, top with crumbled bacon and green onions, and let rest for 5 minutes before serving.

Notes

 Letting the casserole rest before slicing helps it hold its shape. Store leftovers covered in the fridge for up to 4 days or freeze for up to 3 months.
