Ingredients
-
4 boneless, skinless chicken breasts
-
1 cup bread crumbs
-
1 cup grated Parmesan cheese (divided)
-
1 cup shredded mozzarella cheese
-
½ cup all-purpose flour
-
2 large eggs
-
¼ cup milk
-
2 cloves garlic, minced
-
1 teaspoon dried Italian seasoning
-
½ teaspoon salt
-
¼ teaspoon black pepper
-
2 tablespoons olive oil
Instructions
Step 1: Prepare the breading stations
Start by setting up three shallow bowls or plates. In the first bowl, place the all-purpose flour. In the second, whisk together the eggs and milk until smooth. In the third, combine the breadcrumbs, half of the grated Parmesan cheese, Italian seasoning, salt, and black pepper. This setup allows you to create a perfect breading layer by dredging the chicken breasts through each mixture in sequence.
Step 2: Bread the chicken
Take each chicken breast and first dredge it in the flour, shaking off any excess. Next, dip it into the egg mixture, ensuring it is fully coated. Finally, press the chicken into the breadcrumb mixture firmly so the coating adheres well. For extra crunch, you can double-dip by repeating the egg and breadcrumb steps.
Step 3: Sear the chicken
Heat olive oil in a large skillet over medium-high heat. Once hot, carefully place the breaded chicken breasts in the pan. Cook for about 3–4 minutes on each side, or until they are golden brown and crispy. Searing locks in juices and gives the chicken a delicious crunchy texture before baking.
Step 4: Add the cheese and garlic topping
Transfer the seared chicken breasts to a greased baking dish. Mix the remaining Parmesan cheese with the shredded mozzarella and minced garlic, then evenly sprinkle the cheese mixture over each chicken breast. The garlic infuses the topping with savory aroma and depth, while the cheeses melt to create a luscious, bubbly crust.
Step 5: Bake to perfection
Preheat your oven to 375°F (190°C). Bake the chicken uncovered for 20–25 minutes, or until the chicken is cooked through (internal temperature of 165°F) and the cheese topping is melted, golden, and bubbly. For a golden-brown finish, you can broil the chicken for the last 1–2 minutes, but watch carefully to prevent burning.
Notes
Use freshly grated Parmesan rather than pre-grated for better melt and flavor.
To ensure even cooking, pound chicken breasts to an even thickness before breading.
Double coating the chicken in egg and breadcrumbs creates a thicker crust.
If you want extra garlic flavor, mix some garlic powder into the breadcrumb mixture.
Let the breaded chicken rest for 5 minutes before cooking to help the coating stick better.
