  • 2 tablespoons unsalted butter

  • 2 tablespoons all-purpose flour

  • ½ cup milk

  • 1 ½ cups shredded cheddar cheese


Instructions

  1. Cook the Macaroni: Boil the macaroni noodles in salted water according to package instructions until al dente. Drain and set aside.

  2. Make the Cheese Sauce: In a medium saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1-2 minutes until it forms a smooth paste (roux) but does not brown.

  3. Add Milk: Gradually whisk in the milk, stirring constantly to avoid lumps. Cook until the sauce thickens, about 3-5 minutes.

  4. Add Cheese: Remove the sauce from heat and stir in the shredded cheddar cheese until melted and smooth.

  5. Combine Pasta and Cheese Sauce: Add the cooked macaroni noodles into the cheese sauce and stir to coat evenly.

  6. Chill Mixture: Transfer the mac and cheese mixture to a bowl and refrigerate for at least 1 hour to firm up—this helps the bites hold their shape.

  7. Form Bites: Using your hands or a small scoop, form bite-sized balls or shapes from the chilled mixture.

  8. Cook the Bites:

    • Frying: Heat oil in a deep pan and fry the bites until golden brown and crispy, about 2-3 minutes per side. Drain on paper towels.

    • Baking: Preheat oven to 400°F (200°C). Place bites on a parchment-lined baking sheet, brush lightly with oil, and bake for 15-20 minutes, turning halfway, until golden and crispy.

  9. Serve: Serve warm with your favorite dipping sauce.
