Ingredients

- 2 tablespoons chopped fresh parsley and/or basil leaves
- 2 tablespoons fresh lemon juice
- 2 teaspoons lemon zest
- 1 garlic clove, grated
- ¼ teaspoon red pepper flakes
- ¼ teaspoon sea salt
- ⅔ cup extra-virgin olive oil (or enough to cover the mozzarella balls)
- 8 ounces ciliegine fresh mozzarella cheese balls, drained and patted dry
Instructions
- In a mixing bowl or jar, combine chopped parsley and/or basil, lemon juice, lemon zest, grated garlic, red pepper flakes, sea salt, and half the olive oil.
- Add the drained and patted-dry mozzarella balls to the bowl or jar.
- Pour the remaining olive oil over the mozzarella balls until fully submerged. Add more if needed.
- Seal and refrigerate for at least 1 hour to let the flavors meld. For stronger flavor, marinate up to 24–48 hours.
- Before serving, bring to room temperature so the olive oil returns to its liquid form and the flavors are more pronounced.
Notes
Always pat the mozzarella dry before marinating—it helps the oil and flavors cling better.
Use a glass jar or non-reactive container to prevent any off-flavors during marination.
Feel free to switch up the herbs based on availability: thyme, rosemary, or oregano work beautifully.
