Ingredients
- 2 pounds ground chicken
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan
- 3 cloves garlic, minced
- 1 egg
- 1/4 cup milk
- 2 tablespoons fresh parsley, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Pinch of crushed red pepper (optional)
- 2 tablespoons melted butter (for topping)
- 1/4 cup grated Parmesan (for topping)
- 1 clove garlic, minced (for topping)
Instructions

Preheat oven to 375°F (190°C) and lightly grease a loaf pan with butter or nonstick spray.

In a large bowl, combine ground chicken, breadcrumbs, 1/2 cup Parmesan, minced garlic, egg, milk, parsley, salt, pepper, and optional red pepper. Mix gently.

Transfer mixture to the loaf pan and press evenly into shape, smoothing the top for uniform cooking.

In a small bowl, mix melted butter, 1/4 cup Parmesan, and minced garlic, then spread over the top of the meatloaf.

Bake for 50–60 minutes, or until internal temperature reaches 165°F (74°C).

Remove from oven and let rest for 10 minutes to allow juices to redistribute.

Slice into portions and serve warm with desired sides.
Notes
Store leftovers in an airtight container for up to 4 days, or freeze for up to 3 months. Serve with mashed potatoes, roasted vegetables, or salad. Optional variations include using ground turkey, adding shredded cheese, or substituting gluten-free breadcrumbs.
