Description

Ingredients

  • 1 lb cooked shrimp, peeled and deveined

  • 1 cup tomato juice (preferably Clamato)

  • 1/2 cup fresh lime juice (about 4 limes)

  • 1/2 cup ketchup

Instructions

  1. In a large bowl, combine the tomato juice, lime juice, and ketchup. Stir until well blended.

  2. Add the cooked shrimp to the mixture and toss gently to coat evenly.

  3. Chill in the refrigerator for at least 30 minutes before serving to let flavors meld.

  4. Serve cold in individual glasses or a large bowl, garnished with lime wedges if desired.

Notes

For extra flavor, add diced avocado, chopped cilantro, or a dash of hot sauce. Store leftovers in an airtight container in the fridge for up to 2 days.
