Description
A cheesy, crunchy Tex-Mex inspired casserole layered with Doritos, seasoned chicken or beef, and gooey melted cheese. Perfect for weeknights or potlucks.
Ingredients

- 1 bag Nacho Doritos, crushed
- 2 cups shredded chicken or cooked ground beef
- 2 cups shredded cheese (cheddar or Mexican blend)
- 1 cup sour cream
- 1 can (10.5 oz) cream of chicken soup
- 1 cup salsa or Rotel tomatoes
- 1/2 cup black beans (optional)
- 1/2 cup corn kernels (optional)
- 2 tablespoons jalapeños, diced (optional)
Instructions
- Preheat oven to 350°F (175°C) and lightly grease a 9×13-inch casserole dish.
- In a mixing bowl, combine chicken or beef, sour cream, soup, salsa, and 1 cup of shredded cheese. Stir until well blended.
- Spread half of the crushed Doritos on the bottom of the dish, then layer with the meat mixture.
- Top with remaining Doritos and sprinkle evenly with the rest of the shredded cheese.
- Cover with foil and bake for 20–25 minutes, removing the foil during the last 5 minutes to allow the cheese to melt and turn golden.
- Let the casserole rest for 5–10 minutes before serving.
Notes
Leftovers can be stored in the refrigerator for up to 3 days and reheated in the oven. Add a dollop of sour cream, guacamole, or fresh pico de gallo for serving.
