Crust

  • 9 graham crackers, finely crushed (1 envelope)
  • 3 tablespoons butter, melted
  • 2 tablespoons granulated sugar
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg

Cheesecake Filling

  • 8 ounces cream cheese, softened
  • ½ cup powdered sugar
  • 2 teaspoons vanilla extract
  • 2 tablespoons sour cream
  • 1 large egg

Apple Filling

  • 2 medium apples, peeled, cored & finely diced
  • 2 tablespoons brown sugar

Streusel Topping

  • ½ cup all-purpose flour
  • 2 tablespoons cold unsalted butter, diced into ½-inch cubes
  • ¼ cup granulated sugar
  • ½ teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon salt

For Serving

  • Caramel sauce

Instructions

  1. Prepare the Crust
    Preheat oven to 325°F (163°C). Line a muffin pan with 12 paper liners. In a bowl, mix graham cracker crumbs, melted butter, sugar, cinnamon, and nutmeg. Press 1–2 tablespoons into each liner. Bake 5 minutes. Set aside.
  2. Make the Cheesecake Filling
    Beat cream cheese until smooth. Add powdered sugar and mix until creamy. Blend in vanilla and sour cream. Add egg and mix gently until combined—do not overbeat.
  3. Add the Apple Layer
    Toss diced apples with brown sugar. Spoon about 1 tablespoon onto each crust, pressing lightly.
  4. Pour in the Cheesecake Mixture
    Distribute filling evenly over the apple layer, filling each cup about ¾ full.
  5. Make the Streusel Topping
    Combine flour, butter, sugar, cinnamon, nutmeg, and salt using a pastry cutter or fork until coarse crumbs form. Sprinkle generously over each cheesecake.
  6. Bake
    Bake for 20–25 minutes until centers are set. Cool in the pan for 20 minutes, then refrigerate at least 2 hours.
  7. Serve With Caramel
    Drizzle caramel sauce over each cheesecake before serving.

Notes

Use tart apples like Granny Smith for balance or sweeter apples for extra richness.

Allow cheesecakes to chill fully—cold sets the texture and sharpens the layers.

A mini food processor makes perfect fine graham crumbs.

Freeze without caramel for longer storage.
