  • 2 lbs cooked and shredded pulled pork

  • 1 cup BBQ sauce

  • 1 large onion, diced

  • 1 cup shredded cheddar cheese

  • ½ cup shredded mozzarella cheese

  • 6 slices bacon, cooked and crumbled

  • 2 cups diced potatoes (fresh or frozen)

  • 2 tbsp olive oil

  • ½ tsp garlic powder

  • Salt and pepper, to taste

  • Sliced green onions (optional, for garnish)


Instructions

1. Prepare the Potatoes and Onions
Heat 2 tbsp olive oil in a large skillet over medium heat. Add 2 cups diced potatoes, stirring occasionally. Season with garlic powder, salt, and pepper. Cook until golden and tender, about 10–12 minutes. Next, add the diced onion and cook for another 3–4 minutes until softened.

2. Combine Pulled Pork and BBQ Sauce
Stir in 2 lbs pulled pork, cooked and shredded, then pour in 1 cup BBQ sauce. Mix well so every shred of pulled pork coats evenly in sauce. Continue cooking until heated through, about 3–5 minutes.

3. Add Cheeses and Melt
Sprinkle 1 cup shredded cheddar cheese and ½ cup mozzarella cheese evenly over the top of the skillet contents. Cover the skillet and cook for 2–3 minutes, until both cheeses are fully melted and bubbling.

4. Top with Bacon and Garnish
Remove the skillet lid. Scatter 6 slices cooked and crumbled bacon across the melted cheese. Finally, optionally garnish with sliced green onions to add brightness and color.
