- 2 teaspoon baking powder
- 1 teaspoon salt
Instructions
- Preheat oven to 350°F (175°C). Line a muffin tin with cupcake liners.
- Blend fresh spinach and milk in a food processor until smooth.
- In a separate bowl, cream together the butter and sugar until light and fluffy.
- Add eggs, one at a time, beating well after each addition. Mix in vanilla extract.
- Add the spinach mixture to the butter mixture and stir until combined.
- In a separate bowl, whisk together flour, baking powder, and salt. Slowly add the dry ingredients to the wet mixture, stirring just until combined.
- Spoon batter into cupcake liners, filling each ⅔ full.
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Let the cupcakes cool completely before frosting or serving.
