This No Bake Pecan Pie Dip combines the creamy texture of cheesecake with the caramelized nuttiness of traditional pecan pie. It’s a crowd-pleasing, no-bake dessert that’s perfect for parties, potlucks, or any time you want something indulgent without turning on the oven.


Ingredients

  • 8 ounces cream cheese, softened
  • 4 ounces whipped topping (such as Cool Whip), thawed
  • 1 cup powdered sugar
  • 1/2 cup brown sugar
  • 3 tablespoons cold butter, cut into small pieces
  • 1/3 cup light corn syrup
  • 1 cup chopped pecans
  • 1 large egg
  • 1 ½ teaspoons vanilla extract
  • 1/4 teaspoon kosher salt
  • Apple slices, pretzel crisps, or graham crackers for serving

Instructions

  1. Prepare the Creamy Base:
    In a large mixing bowl, beat the softened cream cheese until smooth and fluffy. Add the powdered sugar and continue mixing until well combined and creamy.
  2. Fold in the Whipped Topping:
    Gently fold in the whipped topping using a spatula until the mixture is light and fluffy. Spread this mixture evenly into a shallow serving dish or pie plate. Set aside.
  3. Make the Pecan Pie Topping:
    In a small saucepan over medium heat, combine the brown sugar, butter, and corn syrup. Stir until the butter melts and the mixture begins to bubble.
  4. Add the Egg and Thicken:
    In a separate bowl, lightly beat the egg. Slowly drizzle a small amount of the hot sugar mixture into the egg while whisking continuously (to temper it), then pour the egg mixture back into the saucepan. Continue cooking and stirring until thickened, about 2–3 minutes.
  5. Stir in Pecans, Vanilla, and Salt:
    Remove from heat and stir in the chopped pecans, vanilla extract, and kosher salt. Let cool for about 10 minutes before spreading over the cream cheese layer.
  6. Chill Before Serving:
    Refrigerate the dip for at least 30 minutes to set slightly. Serve with apple slices, pretzel crisps, or graham crackers.

Passive time (chilling): 30 minutes

The topping can be made a day in advance and stored in the fridge—just warm slightly before layering.

For a thicker topping, cook the sugar mixture an extra minute or two to reduce it slightly.
