One Pan Baked Zucchini Cheese

Description

Tender zucchini slices baked with garlic, olive oil, and melted cheese. A simple, low-carb dish that’s perfect as a side or light main.


Ingredients

  • 3 medium zucchini, sliced

  • 2 cloves garlic, minced

  • 2 tablespoons olive oil

  • 1 cup shredded mozzarella cheese

  • 1/4 cup grated Parmesan cheese

  • Salt, to taste

  • Black pepper, to taste

  • Fresh parsley or basil, for garnish (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a baking dish.

  2. Slice zucchini into thin rounds and place in a bowl. Toss with olive oil, garlic, salt, and pepper.

  3. Arrange zucchini in the baking dish, overlapping slightly. Sprinkle mozzarella and Parmesan evenly on top.

  4. Bake for 18–22 minutes until zucchini is tender and cheese is golden and bubbly.

  5. Garnish with fresh herbs before serving warm.

Notes

For a crispier top, broil for 1–2 minutes at the end. Leftovers keep in the fridge for up to 3 days and reheat best in the oven.
