Description
Tender zucchini slices baked with garlic, olive oil, and melted cheese. A simple, low-carb dish that’s perfect as a side or light main.
Ingredients
- 3 medium zucchini, sliced
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- Salt, to taste
- Black pepper, to taste
- Fresh parsley or basil, for garnish (optional)
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a baking dish.
- Slice zucchini into thin rounds and place in a bowl. Toss with olive oil, garlic, salt, and pepper.
- Arrange zucchini in the baking dish, overlapping slightly. Sprinkle mozzarella and Parmesan evenly on top.
- Bake for 18–22 minutes until zucchini is tender and cheese is golden and bubbly.
- Garnish with fresh herbs before serving warm.
Notes
For a crispier top, broil for 1–2 minutes at the end. Leftovers keep in the fridge for up to 3 days and reheat best in the oven.
