One-Pan Roasted Sausages with Potatoes, Peppers & Onions

Description

A hearty, comforting sheet pan dinner with juicy sausages, tender potatoes, and caramelized peppers and onions. Perfect for busy weeknights with minimal cleanup.


Ingredients

  • 2 tablespoons olive oil

  • 2 large onions, sliced into wedges

  • 2 red bell peppers, deseeded and cut into large chunks

  • 2 garlic cloves, chopped

  • 1 ½ pounds baby potatoes, halved

  • 1 teaspoon dried oregano (optional)

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • 1 pound Italian sausages (or your favorite variety)


Instructions

  2. In a large bowl, toss potatoes, onions, peppers, and garlic with olive oil, salt, pepper, and oregano until well coated.

  3. Spread vegetables evenly on the sheet pan. Place sausages on top or nestled between the veggies.

  4. Roast for 35–40 minutes, turning sausages halfway through, until sausages are golden and cooked through and potatoes are tender.

  5. Rest for 5 minutes before serving to allow flavors to settle. Serve warm.

Notes

 Leftovers can be refrigerated for up to 3 days and reheated in the oven to restore crispiness. Pairs well with a green salad or crusty bread.
