Ingredients

1 pound breakfast sausage, cooked and crumbled

2 cups pancake mix

2 large eggs

1 1/2 cups milk

1/4 cup vegetable oil or melted butter

1 cup shredded cheddar cheese

Nonstick spray or butter, for greasing pan
Instructions

Preheat oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.

In a skillet, cook sausage until browned and fully cooked. Drain excess grease and set aside.

In a bowl, whisk together pancake mix, eggs, milk, and oil until smooth.

Pour half of the pancake batter into the prepared dish.

Evenly spread cooked sausage over the batter, then sprinkle with shredded cheese.

Pour the remaining pancake batter on top, spreading gently to cover.

Bake for 35–40 minutes, until golden brown and a toothpick inserted in the center comes out clean.

Let rest for 10 minutes before slicing. Drizzle with maple syrup when serving.
Notes
For variety, swap sausage with bacon, ham, or turkey sausage. Add sautéed veggies like peppers or spinach for extra flavor. Store leftovers in the fridge for up to 4 days or freeze in portions for up to 2 months.
