Ingredients

  • 2 quarts cold water, plus more as needed
  • 1 ½ pounds ham bone
  • 2 onions, thinly sliced
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 1 pinch dried marjoram
  • 3 stalks celery, chopped
  • 3 carrots, chopped
  • 1 potato, diced

Instructions

  • Rinse the split peas thoroughly under cold water.
  • In a large pot, combine the split peas, water, and ham bone.
  • Bring to a boil, then reduce heat and simmer for 1 hour, stirring occasionally.
  • Add the onions, salt, pepper, marjoram, celery, carrots, and potato.
  • Simmer for another hour, or until the peas are tender and the soup has thickened.
  • Remove the ham bone, chop the meat, and return it to the pot.
  • Adjust the seasoning to taste before serving.

Notes

  • For a vegetarian version, omit the ham bone and use vegetable broth.
