- 2 quarts cold water, plus more as needed
- 1 ½ pounds ham bone
- 2 onions, thinly sliced
- ½ teaspoon salt
- ¼ teaspoon ground black pepper
- 1 pinch dried marjoram
- 3 stalks celery, chopped
- 3 carrots, chopped
- 1 potato, diced
Instructions
- Rinse the split peas thoroughly under cold water.
- In a large pot, combine the split peas, water, and ham bone.
- Bring to a boil, then reduce heat and simmer for 1 hour, stirring occasionally.
- Add the onions, salt, pepper, marjoram, celery, carrots, and potato.
- Simmer for another hour, or until the peas are tender and the soup has thickened.
- Remove the ham bone, chop the meat, and return it to the pot.
- Adjust the seasoning to taste before serving.
Notes
- For a vegetarian version, omit the ham bone and use vegetable broth.
- The soup thickens as it cools; add more water if needed to reach your desired consistency.
