Peanut Butter Smores Oatmeal Cookie Bars

Description

Chewy peanut butter oatmeal bars layered with gooey marshmallows and melted chocolate—just like campfire s’mores in cookie form. Perfect for sharing or snacking!


Ingredients

 • 12 tablespoons unsalted butter, melted
• 2 cups light brown sugar, packed
• ½ cup creamy peanut butter
• 2 large eggs, room temperature
• 2 teaspoons vanilla extract
• 1 ¾ cups all-purpose flour
• 1 teaspoon baking soda
• ½ teaspoon salt
• 1 ½ cups old-fashioned rolled oats
• 1 ½ cups semi-sweet chocolate chips
• 1 ½ cups mini marshmallows


Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper, leaving an overhang for easy removal. 
  2. In a large bowl, whisk together melted butter and brown sugar until smooth. Add peanut butter and mix until creamy. 
  3. Beat in eggs one at a time, then stir in vanilla extract. 
  4. In a separate bowl, combine flour, baking soda, salt, and oats. Gradually fold into the wet mixture until fully combined. 
  5. Gently fold in chocolate chips and mini marshmallows, distributing them evenly throughout the dough. 
  6. Spread the dough evenly into the prepared pan. Bake for 25–30 minutes or until the edges are golden and the center is set. 
  7. Allow bars to cool completely before lifting out and cutting into squares.

Notes

 Cool completely before slicing for clean edges. Store in an airtight container at room temperature for up to 4 days or freeze for up to 3 months. For extra indulgence, serve warm with ice cream or drizzle with melted chocolate.
