Pie Maker Cheesy Tarts with brie, filo, and cranberry sauce create a simple, elegant appetizer for holidays or entertaining.

- 200g wheel brie, at room temperature
- 3 sheets filo pastry
- 1 tbsp cranberry sauce, plus extra for serving
- Fresh thyme leaves, to serve
Instructions
- Prepare the Brie:
Cut the brie into small cubes or spoon-sized wedges that will fit into your pie maker cavities. - Cut the Pastry:
Lay out the filo sheets and cut them into squares large enough to fit into the pie maker wells (usually 8–10 cm).
Keep leftover filo covered with a damp towel to prevent drying. - Layer the Pastry:
Place 3–4 squares of filo into each pie maker section, rotating each layer slightly to form a star-like shape.
Press gently so the layers adhere. - Add Brie and Cranberry:
Place a piece of brie into each pastry cup, then top with 1/4–1/2 tsp of cranberry sauce. - Cook in Pie Maker:
Close the lid and cook for 5–7 minutes or until golden brown and the cheese has melted. - Finish and Serve:
Remove carefully, add a small extra dollop of cranberry sauce, and sprinkle with fresh thyme.
Notes
Room-temperature brie melts more evenly and quickly.
If filo tears, overlap pieces—imperfections won’t show once cooked.
Add extra cranberry after cooking for color contrast and freshness.
