Description

 A bright, tropical twist on the classic lemon drop cocktail. Fresh pineapple juice and zesty lemon make this drink irresistibly refreshing.


Ingredients

  • 3 oz pineapple juice

  • 2 oz additional pineapple juice (for adjusting sweetness)

  • 1 oz fresh lemon juice

  • 2 oz vodka

  • 1 oz simple syrup

  • Ice cubes

  • Sugar, for rimming glass

  • Lemon wedge or pineapple slice, for garnish

Instructions

  1. Chill a martini or coupe glass in the freezer for 10 minutes. Run a lemon wedge around the rim and dip in sugar for a pretty, sweet finish.

  2. In a cocktail shaker, combine pineapple juice, lemon juice, vodka, and simple syrup. Fill with ice and shake vigorously for about 20 seconds until chilled.

  3. Strain into the prepared glass. Garnish with a pineapple slice or lemon wedge and serve immediately.

Notes

For a mocktail, replace vodka with sparkling water or lemon-lime soda. To make ahead for parties, mix the juices and syrup, refrigerate, and shake individual servings with ice when ready.
