Ingredients

  • 1 cup unsalted butter, softened

  • 1 cup granulated sugar

  • 1 large egg

  • 1 teaspoon vanilla extract

  • 2 ½ cups all-purpose flour

  • 1 teaspoon baking powder

  • ¼ teaspoon salt

  • 1 cup diced pineapple tidbits (fresh or canned, patted dry)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.

  2. In a large bowl, cream together butter and sugar until light and fluffy.

  3. Beat in the egg and vanilla extract until smooth.

  4. In a separate bowl, whisk together flour, baking powder, and salt.

  5. Gradually mix dry ingredients into the wet mixture until a soft dough forms.

  6. Fold in pineapple tidbits gently, avoiding excess liquid.

  7. Scoop tablespoon-sized dough balls onto the prepared baking sheet.

  8. Bake for 12–15 minutes, or until edges are lightly golden.

  9. Cool for 5 minutes on the pan, then transfer to a wire rack to cool completely.

Notes

Pat pineapple dry to prevent soggy cookies. Store in an airtight container for up to 3 days, or freeze for up to 2 months. Delicious served with vanilla ice cream or tea.
