1 1/2 cups graham cracker crumbs

1/2 cup unsalted butter, melted

1 can (15 oz) pumpkin puree

3/4 cup granulated sugar

1/4 cup brown sugar, packed

3 large eggs

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon ground cloves

1/2 teaspoon salt

1 can (12 oz) evaporated milk

1 teaspoon vanilla extract
Instructions

Preheat oven to 350°F (175°C) and line a 9×13-inch pan with parchment paper.

Combine graham cracker crumbs, sugar, and melted butter. Press evenly into the bottom of the pan and bake for 10 minutes.

In a large bowl, whisk pumpkin puree, granulated sugar, and brown sugar until smooth. Add eggs one at a time, mixing well.

Stir in cinnamon, nutmeg, cloves, salt, evaporated milk, and vanilla until combined.

Pour filling over the crust and spread evenly with a spatula.

Bake for 40–45 minutes, or until the center is set but slightly jiggly.

Let cool completely, then refrigerate for at least 3 hours before slicing into bars.
Notes
Chill thoroughly before slicing for clean cuts. Serve with whipped cream, caramel drizzle, or toasted pecans. Store in the refrigerator for up to 4 days or freeze for 2 months.
