Ingredients

  • ½ cup granulated sugar

  • ½ cup packed brown sugar

  • ¼ cup milk

  • ¼ cup pumpkin puree

  • 1 teaspoon vanilla extract

  • 3 cups quick oats

  • 1 teaspoon pumpkin pie spice (or cinnamon)

  • Pinch of salt


Instructions

  • Prepare your workspace: Line a baking sheet with parchment paper or silicone baking mats.

  • Melt the butter: In a medium saucepan over medium heat, melt the unsalted butter until fully liquid.

  • Add sugars and milk: Stir in the granulated sugar, brown sugar, and milk. Bring the mixture to a gentle boil.

  • Cook the mixture: Let it boil for 1½–2 minutes, stirring continuously to prevent burning.

  • Add pumpkin and vanilla: Remove from heat and stir in pumpkin puree and vanilla extract until fully incorporated.

  • Mix in dry ingredients: Stir in oats, pumpkin pie spice, and a pinch of salt. Mix well until everything is evenly coated.

  • Form cookies: Using a spoon or cookie scoop, drop portions of the mixture onto the prepared baking sheet.

  • Cool and set: Let cookies cool at room temperature for 30–40 minutes until firm.

  • Serve and enjoy: Once set, transfer to an airtight container or serve immediately.

Notes

For a richer flavor, toast the oats lightly in a dry skillet before mixing them in.
