Ingredients

½ cup packed brown sugar

¼ cup pumpkin puree

1 teaspoon pumpkin pie spice (or cinnamon)

Instructions

Prepare your workspace: Line a baking sheet with parchment paper or silicone baking mats.

Melt the butter: In a medium saucepan over medium heat, melt the unsalted butter until fully liquid.

Add sugars and milk: Stir in the granulated sugar, brown sugar, and milk. Bring the mixture to a gentle boil.

Cook the mixture: Let it boil for 1½–2 minutes, stirring continuously to prevent burning.

Add pumpkin and vanilla: Remove from heat and stir in pumpkin puree and vanilla extract until fully incorporated.

Mix in dry ingredients: Stir in oats, pumpkin pie spice, and a pinch of salt. Mix well until everything is evenly coated.
