- 40 Ritz crackers
- 20 Rolo candies, unwrapped

- Semi-sweet chocolate chips
- White chocolate chips
- Vegetable oil (for thinning chocolate)

Instructions
- Prepare the baking sheet.
Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper and arrange 20 Ritz crackers face-up. - Place the Rolos.
Add one unwrapped Rolo candy to the center of each cracker. - Bake to soften.
Place the sheet in the oven for 2–3 minutes—just long enough for the Rolos to soften but not melt completely. - Sandwich the crackers.
Remove the tray from the oven and immediately top each softened Rolo with a second Ritz cracker. Press gently to form a sandwich. - Optional chocolate topping.
Melt semi-sweet or white chocolate chips with a teaspoon of vegetable oil until smooth. Drizzle or dip the stuffed crackers as desired. - Decorate (optional).
Add sprinkles while the chocolate is still warm so they adhere properly. - Cool and serve.
Allow the crackers to set at room temperature or refrigerate for faster firming.
Notes
Don’t overheat the Rolos; otherwise, they lose their shape and create a messy texture.
A small amount of vegetable oil thins chocolate for smoother drizzling.
You can freeze these for a firmer, chewier caramel bite.
