Sweet and salty Rolo stuffed Ritz crackers recipe with chocolate toppings and sprinkles. Perfect quick dessert treat!


Ingredients

  • 40 Ritz crackers
  • 20 Rolo candies, unwrapped

Optional Toppings

  • Semi-sweet chocolate chips
  • White chocolate chips
  • Vegetable oil (for thinning chocolate)
  • Sprinkles

Instructions

  1. Prepare the baking sheet.
    Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper and arrange 20 Ritz crackers face-up.
  2. Place the Rolos.
    Add one unwrapped Rolo candy to the center of each cracker.
  3. Bake to soften.
    Place the sheet in the oven for 2–3 minutes—just long enough for the Rolos to soften but not melt completely.
  4. Sandwich the crackers.
    Remove the tray from the oven and immediately top each softened Rolo with a second Ritz cracker. Press gently to form a sandwich.
  5. Optional chocolate topping.
    Melt semi-sweet or white chocolate chips with a teaspoon of vegetable oil until smooth. Drizzle or dip the stuffed crackers as desired.
  6. Decorate (optional).
    Add sprinkles while the chocolate is still warm so they adhere properly.
  7. Cool and serve.
    Allow the crackers to set at room temperature or refrigerate for faster firming.

Notes

Don’t overheat the Rolos; otherwise, they lose their shape and create a messy texture.

A small amount of vegetable oil thins chocolate for smoother drizzling.

You can freeze these for a firmer, chewier caramel bite.
