  • 4 boneless, skinless chicken breasts (pounded to even thickness)
  • ½ tablespoon chili powder
  • ½ tablespoon ground cumin
  • ½ tablespoon paprika
  • ½ teaspoon garlic powder
  • Salt and black pepper, to taste
  • 1½ cups salsa (any preferred heat level)
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
  2. Pat the chicken breasts dry and season both sides evenly with chili powder, cumin, paprika, garlic powder, salt, and pepper.
  3. Heat olive oil in a large skillet over medium-high heat. Sear the chicken for about 2–3 minutes per side until lightly golden.
  4. Transfer the seared chicken to the prepared baking dish in a single layer.
  5. Spoon salsa evenly over each chicken breast, ensuring good coverage.
  6. Sprinkle shredded cheddar cheese over the top.
  7. Bake uncovered for 20 minutes, or until the chicken reaches an internal temperature of 165°F.
  8. Remove from the oven and rest for 5 minutes before serving.

Notes

Use thick, chunky salsa for more texture.

Letting the chicken rest helps keep it juicy.
