Ingredients
Scale
- 1.5 tablespoons olive oil
- 4 boneless, skinless chicken breasts (pounded to even thickness)
- ½ tablespoon chili powder
- ½ tablespoon ground cumin
- ½ tablespoon paprika
- ½ teaspoon garlic powder
- Salt and black pepper, to taste
- 1½ cups salsa (any preferred heat level)
- 1 cup shredded cheddar cheese
Instructions
- Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
- Pat the chicken breasts dry and season both sides evenly with chili powder, cumin, paprika, garlic powder, salt, and pepper.
- Heat olive oil in a large skillet over medium-high heat. Sear the chicken for about 2–3 minutes per side until lightly golden.
- Transfer the seared chicken to the prepared baking dish in a single layer.
- Spoon salsa evenly over each chicken breast, ensuring good coverage.
- Sprinkle shredded cheddar cheese over the top.
- Bake uncovered for 20 minutes, or until the chicken reaches an internal temperature of 165°F.
- Remove from the oven and rest for 5 minutes before serving.
Notes
Use thick, chunky salsa for more texture.
Letting the chicken rest helps keep it juicy.
Adjust spice levels by choosing mild or hot salsa.
