  • 4 medium potatoes, peeled and diced

  • 2 tbsp butter

  • 1/4 cup milk

  • Salt and pepper, to taste

  • 1/2 cup shredded cheddar cheese

  • 1/4 cup milk (for cheese sauce)

  • 1 tbsp butter (for cheese sauce)

  • 1 cup sweet corn kernels

  • 1 tbsp butter (for corn)

  • Pinch of salt and pepper (for corn)

  • 2 sausages of your choice (chicken, pork, or beef)

  • 1 tsp olive oil


Instructions

  • Cook the Potatoes: Place diced potatoes in a large pot and cover with cold water. Bring to a boil over high heat, then reduce to medium and cook until potatoes are fork-tender, about 10–15 minutes.

  • Drain and Mash: Drain potatoes and return them to the pot. Mash with 2 tablespoons of butter and 1/4 cup milk. Season with salt and pepper to taste. Set aside.

  • Prepare Cheese Sauce: In a small saucepan over low heat, melt 1 tablespoon butter. Add 1/4 cup milk and shredded cheddar cheese. Stir continuously until the cheese melts and the sauce is smooth and creamy.

  • Combine Cheese and Potatoes: Pour the cheese sauce over the mashed potatoes and gently stir to combine, or serve the sauce on top for a layered presentation.

  • Cook Buttered Corn: In a separate pan, melt 1 tablespoon butter over medium heat. Add corn kernels and sauté for 3–4 minutes until heated through. Season with salt and pepper.

  • Cook the Sausages: Heat olive oil in a skillet over medium heat. Add sausages and cook, turning occasionally, until browned and cooked through, about 8–10 minutes.

  • Serve: Plate the sausages alongside the creamy mashed potatoes and buttered corn. Enjoy immediately.

Notes

For creamier mashed potatoes, warm your milk before adding.

Choose sausages with flavors you enjoy; spicier varieties add a nice kick.

Buttered corn can be substituted with fresh or frozen kernels for convenience.
