Ingredients

4 medium potatoes, peeled and diced

1/4 cup milk

1/2 cup shredded cheddar cheese

1 cup sweet corn kernels

2 sausages of your choice (chicken, pork, or beef)

Instructions

Cook the Potatoes: Place diced potatoes in a large pot and cover with cold water. Bring to a boil over high heat, then reduce to medium and cook until potatoes are fork-tender, about 10–15 minutes.

Drain and Mash: Drain potatoes and return them to the pot. Mash with 2 tablespoons of butter and 1/4 cup milk. Season with salt and pepper to taste. Set aside.

Prepare Cheese Sauce: In a small saucepan over low heat, melt 1 tablespoon butter. Add 1/4 cup milk and shredded cheddar cheese. Stir continuously until the cheese melts and the sauce is smooth and creamy.

Combine Cheese and Potatoes: Pour the cheese sauce over the mashed potatoes and gently stir to combine, or serve the sauce on top for a layered presentation.

Cook Buttered Corn: In a separate pan, melt 1 tablespoon butter over medium heat. Add corn kernels and sauté for 3–4 minutes until heated through. Season with salt and pepper.

Cook the Sausages: Heat olive oil in a skillet over medium heat. Add sausages and cook, turning occasionally, until browned and cooked through, about 8–10 minutes.

Serve: Plate the sausages alongside the creamy mashed potatoes and buttered corn. Enjoy immediately.
