  • 2 lbs baby potatoes, quartered

  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 2 tablespoons fresh parsley or chives, chopped (optional)

Instructions

  1. Preheat the oven to 400°F (200°C) and wash the baby potatoes, then quarter them evenly.

  2. In a large bowl, toss the potatoes with olive oil, ranch seasoning, salt, and black pepper until evenly coated.

  3. Slice the smoked sausage into 1/2-inch rounds and set aside.

  4. Transfer the seasoned potatoes to an oven-safe skillet and nestle the sausage slices among them.
