- 4 blocks ramen noodles (12 oz total), flavor packets discarded
- 6 cloves garlic, minced
- 2 tablespoons sesame oil
- 1 teaspoon brown sugar
- ¼ cup plus 1 tablespoon soy sauce
- For serving: sliced green onions and sesame seeds
Instructions
- Cook the noodles:
Bring a large pot of water to a boil and cook the ramen noodles according to package directions. Drain and set aside, reserving about ½ cup of the cooking water. - Prepare the sauce base:
In a large skillet or wok, heat sesame oil over medium heat. Add the minced garlic and sauté for 30–45 seconds, just until fragrant—avoid browning the garlic, as it can turn bitter. - Add the seasoning:
Stir in the soy sauce and brown sugar, whisking until combined. Let it bubble gently for 30 seconds to thicken slightly. - Combine noodles and sauce:
Add the cooked ramen noodles to the skillet, tossing them in the sauce until evenly coated. If the noodles appear dry, add a splash of the reserved cooking water. - Garnish and serve:
Remove from heat, sprinkle with sesame seeds and sliced green onions, and serve immediately.
Notes
For deeper flavor, use dark soy sauce instead of light soy sauce.
Don’t overcook the garlic—it should stay golden, not brown.
Add chili flakes or Sriracha if you like a spicy kick.
You can toss in sautéed veggies, eggs, or leftover proteins to make it a complete meal.
