Slow Cooker Loaded Mashed Potatoes Recipe

Creamy Slow Cooker Loaded Mashed Potatoes with bacon, cheese, and chives make the perfect easy comfort side for any meal.


Ingredients

  • 5 pounds potatoes (preferably Yukon gold or red potatoes)
  • ¾ cup low-sodium chicken broth
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder (or dried minced onion)
  • 4 tablespoons butter, salted or unsalted
  • ¼ cup sour cream
  • 3 tablespoons cream cheese
  • Salt and pepper, to taste
  • 1 pound bacon, cooked and crumbled
  • 2 cups cheddar cheese, shredded
  • ⅓ cup chives, chopped

Instructions

  1. Prepare the Potatoes
    Wash, peel if desired, and chop the potatoes into evenly sized chunks. Place them directly in the slow cooker.
  2. Add Seasonings and Liquid
    Pour in the chicken broth, then sprinkle the garlic powder and onion powder over the potatoes. Dot with butter.
  3. Cook the Potatoes
    Cover and cook on High for 3–4 hours or Low for 6–7 hours, until the potatoes are fork-tender.
  4. Mash and Add Creamy Ingredients
    Once cooked, mash the potatoes directly in the slow cooker. Stir in the sour cream, cream cheese, salt, and pepper.
  5. Add the Loaded Toppings
    Fold in half of the cheddar cheese and half of the crumbled bacon. Mix until creamy and evenly combined.
  6. Finish and Serve
    Sprinkle remaining cheddar cheese, bacon, and chopped chives over the top. Serve warm, straight from the slow cooker or transfer to a serving dish.

Notes

For extra creaminess, replace some chicken broth with heavy cream.

Yukon gold potatoes give the smoothest texture; red potatoes create a more rustic mash.

Keep the potatoes warm for up to 3 hours using the slow cooker’s “Warm” setting.

If potatoes seem dry, add warm milk or broth a little at a time.
