- 4 pounds ground beef
- 4 onions, chopped
- 4 (16 ounce) cans chili beans, with liquid
- 4 (15 ounce) cans kidney beans with liquid
- 4 (15 ounce) cans whole kernel corn, with liquid
- 4 (8 ounce) cans tomato sauce
- 8 cups water
- 8 (14.5 ounce) cans peeled and diced tomatoes
- 4 (4 ounce) cans diced green chile peppers
- 4 (1.25 ounce) packages taco seasoning mix
Instructions
- Brown the ground beef in a skillet, draining the fat. Add chopped onions and cook until softened.
- Transfer the beef and onion mixture to the slow cooker.
- Add all canned ingredients (chili beans, kidney beans, corn, tomato sauce, diced tomatoes, green chiles).
- Sprinkle in the taco seasoning mix, then pour in the water. Stir to combine.
- Set the slow cooker to cook on low for 6-8 hours or high for 3-4 hours.
- Once done, stir the soup and adjust seasoning if necessary before serving.
Notes
- Can be made in advance and stored for leftovers.
- Adjust spice level by adding more or less taco seasoning and green chilies.
