Spicy Cheesy Nacho-Stuffed Egg Rolls

Description

Crispy, golden egg rolls packed with spicy taco beef, melty cheese, jalapeños, and crushed tortilla chips. A fun Tex-Mex twist on a classic appetizer that’s perfect for parties or game nights!


Ingredients

  • 1 lb ground beef
  • 1 tbsp taco seasoning
  • ½ cup diced onion
  • 12 jalapeños, finely diced
  • 1 cup shredded cheddar or Mexican cheese blend
  • ½ cup crushed tortilla chips
  • 12 egg roll wrappers
  • Water, for sealing
  • Oil, for frying

Instructions

  1. In a skillet over medium heat, cook ground beef until browned, about 6–8 minutes. Drain excess fat. 
  2. Add taco seasoning, diced onion, and 2 tbsp water; cook for 2–3 minutes until fragrant. 
  3. Remove from heat and stir in cheese and jalapeños until melted and combined. Let cool slightly. 
  4. Place an egg roll wrapper on a clean surface. Spoon 2 tbsp of filling into the center, sprinkle crushed chips, and roll tightly, sealing edges with water. 
  5. Heat oil in a deep pan to 350°F (175°C). Fry rolls in batches for 2–3 minutes per side until golden and crisp. 
  6. Drain on paper towels and serve hot with salsa, guacamole, or queso dip.

Notes

 Cool the filling before wrapping to avoid soggy wrappers. For a lighter version, bake at 400°F (200°C) for 15–18 minutes or air-fry at 375°F (190°C) for 10–12 minutes. Serve immediately for best crunch.
