Crispy, golden egg rolls packed with spicy taco beef, melty cheese, jalapeños, and crushed tortilla chips. A fun Tex-Mex twist on a classic appetizer that’s perfect for parties or game nights!

- 1 lb ground beef
- 1 tbsp taco seasoning
- ½ cup diced onion
- 1–2 jalapeños, finely diced
- 1 cup shredded cheddar or Mexican cheese blend
- ½ cup crushed tortilla chips
- 12 egg roll wrappers
- Water, for sealing
- Oil, for frying
Instructions
- In a skillet over medium heat, cook ground beef until browned, about 6–8 minutes. Drain excess fat.
- Add taco seasoning, diced onion, and 2 tbsp water; cook for 2–3 minutes until fragrant.
- Remove from heat and stir in cheese and jalapeños until melted and combined. Let cool slightly.
- Place an egg roll wrapper on a clean surface. Spoon 2 tbsp of filling into the center, sprinkle crushed chips, and roll tightly, sealing edges with water.
- Heat oil in a deep pan to 350°F (175°C). Fry rolls in batches for 2–3 minutes per side until golden and crisp.
- Drain on paper towels and serve hot with salsa, guacamole, or queso dip.
Notes
Cool the filling before wrapping to avoid soggy wrappers. For a lighter version, bake at 400°F (200°C) for 15–18 minutes or air-fry at 375°F (190°C) for 10–12 minutes. Serve immediately for best crunch.
