Juicy Portuguese-style grilled chicken infused with smoky paprika, garlic, and lemon. Perfect for BBQs, weeknight dinners, or gatherings.

- 4 bone-in, skin-on chicken thighs (or 1 whole chicken cut into pieces)
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1 tablespoon smoked paprika
- 1 fresh red chili, finely chopped (optional)
- Zest and juice of 1 lemon
- 1 teaspoon salt
- ½ teaspoon black pepper
- Fresh parsley, for garnish
Instructions
- In a bowl, whisk together olive oil, garlic, paprika, lemon juice, lemon zest, chili, salt, and pepper until well combined.
- Coat the chicken thoroughly in the marinade, cover, and refrigerate for at least 2 hours or overnight for best flavor.
- Preheat a grill or grill pan to medium-high heat. Lightly oil the grates to prevent sticking.
- Grill the chicken skin-side down for 6–8 minutes per side until cooked through and the internal temperature reaches 165°F (74°C).
- Transfer to a serving platter, let rest for 5 minutes, then garnish with fresh parsley and extra lemon wedges.
Notes
For a milder version, omit the chili. Leftovers keep in the fridge for 3 days or can be frozen for 1 month. Serve with rice, grilled vegetables, or fresh bread.
