Spicy Grilled Portuguese Chicken with Garlic & Lemon Marinade

Description

Juicy Portuguese-style grilled chicken infused with smoky paprika, garlic, and lemon. Perfect for BBQs, weeknight dinners, or gatherings.


Ingredients

  • 4 bone-in, skin-on chicken thighs (or 1 whole chicken cut into pieces)
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 tablespoon smoked paprika
  • 1 fresh red chili, finely chopped (optional)
  • Zest and juice of 1 lemon
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • Fresh parsley, for garnish

Instructions

  1. In a bowl, whisk together olive oil, garlic, paprika, lemon juice, lemon zest, chili, salt, and pepper until well combined. 
  2. Coat the chicken thoroughly in the marinade, cover, and refrigerate for at least 2 hours or overnight for best flavor. 
  3. Preheat a grill or grill pan to medium-high heat. Lightly oil the grates to prevent sticking. 
  4. Grill the chicken skin-side down for 6–8 minutes per side until cooked through and the internal temperature reaches 165°F (74°C). 
  5. Transfer to a serving platter, let rest for 5 minutes, then garnish with fresh parsley and extra lemon wedges.

Notes

For a milder version, omit the chili. Leftovers keep in the fridge for 3 days or can be frozen for 1 month. Serve with rice, grilled vegetables, or fresh bread.
