  • ½ cup sour cream
  • 1 cup shredded cheddar cheese
  • ½ cup diced jalapeños (adjust for spice level)
  • ½ cup chopped roasted red peppers
  • ¼ cup chopped fresh green onions
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon cayenne pepper (optional, for extra heat)
  • Salt and black pepper to taste

Instructions

  1. Prepare Your Base
    In a large mixing bowl, combine softened cream cheese and sour cream. Mix until smooth and creamy.
  2. Add the Vegetables
    Fold in the roasted or canned corn, diced jalapeños, roasted red peppers, and green onions.
  3. Season the Dip
    Add garlic powder, smoked paprika, cayenne pepper (optional), salt, and black pepper. Mix well to ensure even flavor distribution.

    Stir in the shredded cheddar cheese until fully combined.

Notes

Roasted corn gives the deepest flavor but canned works in a pinch.

For extra heat, use fresh jalapeños with seeds.

For a smoother dip, blend half of the mixture before combining.
