Description

A delicious and festive Halloween dish featuring orange bell peppers carved like jack-o’-lanterns, stuffed with a savory turkey and rice mixture.


Ingredients

  • 8 orange bell peppers
  • 2 tablespoons olive oil
  • 2 ¼ cups diced yellow onion (about 1 large onion)
  • 1 pound lean ground turkey
  • 3 cloves garlic, minced
  • 1 ½ cups white basmati rice, cooked according to package instructions
  • 15.5 ounce can black beans, drained and rinsed
  • 15 ounce can tomato sauce
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • ¾ cup shredded cheddar or Colby Jack cheese

Instructions

  • Preheat your oven to 350°F (175°C).
  • Cut the tops off the orange bell peppers and remove the seeds.
  • Heat olive oil in a skillet over medium heat. Add onions and garlic, cooking until soft.
  • Add ground turkey to the skillet. Cook until browned, stirring occasionally.
  • Stir in the cooked rice, black beans, tomato sauce, oregano, basil, salt, and pepper. Mix well.
  • Stuff each pepper with the turkey mixture and place them in a baking dish.
  • Sprinkle cheese on top of each stuffed pepper.
  • Cover the dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes until the cheese is bubbly.
