Ingredients

- 2 lbs. Idaho® potatoes
- 1 Tablespoon salt
- 4 Tablespoons butter
- 3/4 – 1 cup milk or half and half
- Additional salt and pepper (to taste)
- 4 ounces cheddar or colby jack cheese (shredded)
- 8 slices bacon
- 1/3 cup sour cream
Instructions
- Preheat your oven to 350°F (175°C).
- Peel and chop the Idaho® potatoes, then place them in a large pot.
- Add enough water to cover the potatoes and stir in 1 tablespoon of salt.
- Boil the potatoes until fork-tender, about 15-20 minutes.
- Drain the potatoes and return them to the pot.
- Add butter and milk, then mash until smooth. Season with salt and pepper.
- Stir in sour cream and mix well.
- Transfer the mashed potatoes to a greased baking dish.
- Cook bacon until crispy, then crumble and sprinkle over the potatoes.
- Top with shredded cheese, forming a spider web design with sour cream.
- Bake for 25-30 minutes until bubbly and golden.
