Description

These delicious Halloween cupcakes are soft, rich chocolate treats topped with fun mummy decorations made from royal icing and candy eyes. Perfect for kids and adults alike, these cupcakes are a festive addition to any Halloween celebration.


Ingredients

  • 175 g plain/ all-purpose flour
  • 180 g caster sugar
  • 30 g cocoa powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 100 g chocolate chips or chopped chocolate
  • 100 ml cold coffee
  • 100 ml buttermilk (see notes for the alternative)
  • 110 ml vegetable oil
  • 2 large eggs
  • For the topping and decoration:
    • Royal icing/ buttercream/ frosting of choice
    • Edible eyes/ candy eyes

Instructions

  • Preheat your oven to 180°C (350°F) and line a cupcake tray with paper cases.
  • In a large bowl, sift together the flour, cocoa powder, baking soda, and salt. Stir in the caster sugar.
  • Add the chocolate chips or chopped chocolate to the dry ingredients.
  • In a separate bowl, mix the cold coffee, buttermilk, vegetable oil, and eggs until well combined.
  • Gradually pour the wet ingredients into the dry ingredients, mixing until just combined.
  • Divide the batter evenly between the cupcake cases, filling each about two-thirds full.
  • Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  • Let the cupcakes cool completely before decorating with royal icing or buttercream to resemble mummies. Add edible eyes to complete the look.

Notes

  • If you don’t have buttermilk, you can make your own by adding 1 tablespoon of vinegar or lemon juice to 100 ml of milk and letting it sit for 5 minutes.
  • You can use store-bought frosting for convenience or make your own from scratch.
