Description

Moist and chocolatey cupcakes topped with a rich cream cheese frosting and adorned with Oreo spider decorations, perfect for any spooky celebration.


Ingredients

    • Cupcakes:
      • 2 cups (400 grams) granulated sugar or coconut sugar or 1 cup (320 grams) honey
      • 1 ¾ cups (236 grams) flour (see notes for options)
      • ¾ cup (85 grams) cocoa powder (Dutch-process)
      • 1 teaspoon baking powder
      • 1 teaspoon baking soda
      • 1 teaspoon salt
      • 2 large eggs (50 grams each, out of shell) or 2 chia eggs
      • 1 cup (240 milliliters) milk
      • ½ cup (120 milliliters) oil
      • 2 teaspoons vanilla extract
      • ¾ cup (177 milliliters) boiling water
    • Cream Cheese Frosting:
      • ⅔ cup (150 grams) unsalted butter, softened
      • two 8-ounce packages (450 grams total) full-fat cream cheese, room temperature
      • ⅛ teaspoon salt
      • ½ teaspoon vanilla extract
      • 2 cups (240 grams) powdered sugar
    • Decoration:
      • 24 Oreos (use GF Oreos if you’re gluten-free)
      • 1 ⅓ cups (226 grams) semi-sweet chocolate chips or chopped chocolate
      • 48 candy eyes

Instructions

  • Preheat the oven to 350°F (175°C) and line a cupcake tray with 24 cupcake liners.
  • In a large bowl, mix the dry ingredients (sugar, flour, cocoa powder, baking powder, baking soda, and salt).
  • Add the eggs, milk, oil, and vanilla extract, then mix until smooth.
  • Slowly stir in the boiling water until well combined.
  • Pour the batter into the cupcake liners, filling them about ¾ full.
  • Bake for 18-22 minutes or until a toothpick comes out clean. Let them cool.
  • For the frosting, beat the softened butter and cream cheese until smooth.
  • Add vanilla extract, salt, and powdered sugar, mixing until fluffy.
  • Pipe the frosting onto cooled cupcakes.
  • Decorate with Oreos as spider bodies, chocolate for legs, and candy eyes.

Notes

For gluten-free cupcakes, use GF flour and GF Oreos.
