- Cupcakes:
- 2 cups (400 grams) granulated sugar or coconut sugar or 1 cup (320 grams) honey
- 1 ¾ cups (236 grams) flour (see notes for options)
- ¾ cup (85 grams) cocoa powder (Dutch-process)
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 2 large eggs (50 grams each, out of shell) or 2 chia eggs
- 1 cup (240 milliliters) milk
- ½ cup (120 milliliters) oil
- 2 teaspoons vanilla extract
- ¾ cup (177 milliliters) boiling water
- Cream Cheese Frosting:
- ⅔ cup (150 grams) unsalted butter, softened
- two 8-ounce packages (450 grams total) full-fat cream cheese, room temperature
- ⅛ teaspoon salt
- ½ teaspoon vanilla extract
- 2 cups (240 grams) powdered sugar
- Decoration:
- 24 Oreos (use GF Oreos if you’re gluten-free)
- 1 ⅓ cups (226 grams) semi-sweet chocolate chips or chopped chocolate
- 48 candy eyes

Instructions
- Preheat the oven to 350°F (175°C) and line a cupcake tray with 24 cupcake liners.
- In a large bowl, mix the dry ingredients (sugar, flour, cocoa powder, baking powder, baking soda, and salt).
- Add the eggs, milk, oil, and vanilla extract, then mix until smooth.
- Slowly stir in the boiling water until well combined.
- Pour the batter into the cupcake liners, filling them about ¾ full.
- Bake for 18-22 minutes or until a toothpick comes out clean. Let them cool.
- For the frosting, beat the softened butter and cream cheese until smooth.
- Add vanilla extract, salt, and powdered sugar, mixing until fluffy.
- Pipe the frosting onto cooled cupcakes.
- Decorate with Oreos as spider bodies, chocolate for legs, and candy eyes.
Notes
For gluten-free cupcakes, use GF flour and GF Oreos.
