Zombie Brain Brownie Bites

  • Author: Sarah White
  • Total Time: 55 minutes
  • Yield: 12 brain bites 1x
  • Diet: Vegetarian

Description

  • These brain-shaped brownie bites are the perfect creepy-crawly dessert for any Halloween celebration. With rich, fudgy brownies covered in vibrant green candy melts and filled with “bloody” strawberry jelly, they’re as fun to look at as they are to eat!

Ingredients

Scale
    • Box brownie mix, plus ingredients to make them
    • 1 lb vibrant green candy coating melts, divided use (see note)
    • 1/3 cup heavy cream
    • 2 TBSP strawberry jelly
    • Green gel food coloring (Americolor brand recommended)
    • Brain candy mold

Instructions

  • Prepare the brownies: Make the brownie mix according to the package instructions. Bake them and let them cool completely.
  • Prepare the candy melts: Melt half of the green candy melts according to the package instructions. Use them to coat the brain candy mold, ensuring all surfaces are covered. Let the coating set.
  • Make the ganache filling: Heat the heavy cream until warm but not boiling. Pour it over the remaining green candy melts and stir until smooth. Add green gel food coloring to intensify the color.
  • Fill the molds: Spoon a bit of the ganache into each brain mold, followed by a small amount of strawberry jelly in the center for the “bloody” effect. Add a brownie square on top and press down lightly.
  • Seal the molds: Cover the backs of the brownies with more melted candy to seal the treats in the mold. Let them cool completely before unmolding.
  • Serve and enjoy: Once set, carefully remove the brownie brains from the molds and enjoy!

Notes

  • The green candy coating can be found at most baking stores or online. If you can’t find vibrant green melts, white candy melts and green food coloring work as a substitute.
  • For a more realistic look, use a fine-tip brush to add additional detailing with food coloring once the brains are set.
