Ingredients
- 8 oz cream cheese, softened
- 1/3 cup powdered sugar
- 1 tsp vanilla extract
- 1 cup diced fresh strawberries
- 8–10 eggroll wrappers
- 1–2 cups vegetable oil, for frying
- Optional: chocolate drizzle, powdered sugar, or whipped cream for serving
Instructions
- In a bowl, beat softened cream cheese, powdered sugar, and vanilla until smooth. Fold in diced strawberries.
- Lay an eggroll wrapper on a clean surface, spoon 2 tablespoons of filling in the center, fold sides in, and roll tightly, sealing with water.
- Heat vegetable oil in a pan to 350°F (175°C).
- Fry eggrolls in batches for 2–3 minutes per side until golden brown.
- Drain on paper towels and let cool 5–10 minutes before serving.
- Optionally, drizzle with chocolate or dust with powdered sugar. Serve warm.
Notes
Best served fresh but can be refrigerated for up to 3 days. Freeze unbaked for up to 1 month and fry directly from frozen. Pair with whipped cream or fresh berries for extra indulgence.
