- 1 cup graham cracker crumbs
- 2 tablespoons sugar
- 4 tablespoons unsalted butter, melted
- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1 cup whipped cream
- 12 golden sandwich cookies
- 1 cup freeze-dried strawberries
- 2 tablespoons unsalted butter, melted (for topping)
Instructions
- In a bowl, mix graham cracker crumbs, sugar, and melted butter until combined. Press into mini muffin pan cups to form crusts. Chill for 15 minutes.
- Beat softened cream cheese until smooth. Add powdered sugar and mix until creamy, then gently fold in whipped cream.
- Spoon or pipe filling over the chilled crusts. Smooth the tops and refrigerate while preparing the topping.
- Crush cookies and freeze-dried strawberries into crumbs. Stir in melted butter until mixture is slightly sticky.
- Sprinkle topping generously over cheesecake bites. Chill for 2–3 hours before serving.
Notes
Store in the refrigerator for up to 4 days. For longer storage, freeze up to 2 months and thaw overnight. Best served chilled with fresh berries.
