Description

Creamy no-bake cheesecake bites with a buttery graham cracker crust and a nostalgic strawberry crunch topping. Perfect for parties and celebrations.


Ingredients

  • 1 cup graham cracker crumbs
  • 2 tablespoons sugar
  • 4 tablespoons unsalted butter, melted
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 cup whipped cream
  • 12 golden sandwich cookies
  • 1 cup freeze-dried strawberries
  • 2 tablespoons unsalted butter, melted (for topping)

Instructions

  1. In a bowl, mix graham cracker crumbs, sugar, and melted butter until combined. Press into mini muffin pan cups to form crusts. Chill for 15 minutes. 
  2. Beat softened cream cheese until smooth. Add powdered sugar and mix until creamy, then gently fold in whipped cream. 
  3. Spoon or pipe filling over the chilled crusts. Smooth the tops and refrigerate while preparing the topping. 
  4. Crush cookies and freeze-dried strawberries into crumbs. Stir in melted butter until mixture is slightly sticky. 
  5. Sprinkle topping generously over cheesecake bites. Chill for 2–3 hours before serving.

Notes

 Store in the refrigerator for up to 4 days. For longer storage, freeze up to 2 months and thaw overnight. Best served chilled with fresh berries.
