Description

A traditional Mediterranean recipe, combining the flavors of Italian bread, garlic, parsley, and Romano cheese, stuffed into tender artichokes.


Ingredients

  • 6 whole artichokes
  • 3 slices Italian bread, cubed
  • 1 clove garlic, minced
  • ⅛ cup chopped fresh parsley
  • ¼ cup grated Romano cheese
  • ½ teaspoon dried oregano
  • 5 tablespoons vegetable oil, divided
  • salt and pepper to taste

Instructions

  • Preheat oven to 375°F (190°C).
  • Prepare the artichokes by trimming the tops and removing the tough outer leaves.
  • In a bowl, combine bread cubes, garlic, parsley, Romano cheese, oregano, 3 tablespoons of vegetable oil, salt, and pepper.
  • Stuff the mixture into each artichoke.
  • Place the artichokes in a baking dish, drizzle with remaining oil, and cover with foil.
  • Bake for 60-75 minutes until the artichokes are tender.
