Ingredients

    • 4 pounds bulk mild Italian sausage
    • 5 teaspoons crushed red pepper flakes
    • 16 slices bacon, cut into ½-inch pieces
    • 4 large onion, diced
    • 4 tablespoons minced garlic
    • 20 (13.75 ounce) cans chicken broth
    • 24 medium potatoes, thinly sliced
    • 4 cups heavy cream
    • 1 bunch fresh spinach, tough stems removed

Instructions

  • Brown the Italian sausage in a large pot.
  • Add bacon, cooking until crispy.
  • Sauté onion and garlic in the rendered fat.
  • Add chicken broth and bring to a boil.
  • Add potatoes, cook until tender.
  • Stir in heavy cream and spinach, cooking until spinach wilts.
  • Season with salt and pepper to taste.
