  • ½ pound Italian sausage, casing removed (sweet or spicy)

Base

  • 32.6 ounces refrigerated biscuits (see note)

Sauce

  • 14 ounces pizza sauce

Cheese

  • 8 ounces mozzarella cheese, shredded

Toppings

  • 3 ounces pepperoni slices
  • ½ cup green bell pepper, cored and chopped
  • ½ cup white onion, peeled and chopped
  • ½ cup button mushrooms, cleaned and chopped
  • 2.25 ounces canned black olives, drained

Instructions

  1. Cook the Sausage
    In a skillet over medium heat, cook Italian sausage until browned. Break into crumbles. Drain grease and set aside.
  2. Prepare the Biscuits
    Preheat oven to 350°F. Cut each biscuit into quarters to help them “bubble up” evenly in the casserole.
  3. Mix the Base Layer
    In a large mixing bowl, combine biscuit pieces with pizza sauce, cooked sausage, half the mozzarella, half the pepperoni, bell pepper, onion, mushrooms, and olives. Stir until everything is coated.
  4. Transfer to Baking Dish
    Spray a 9×13-inch baking dish with nonstick spray. Pour the mixture in and spread evenly.
  5. Top With Remaining Ingredients
    Sprinkle remaining mozzarella and pepperoni on top.
  6. Bake the Casserole
    Bake uncovered for 30–40 minutes or until biscuits are puffed, cooked through, and the cheese browns slightly.
  7. Rest Before Serving
    Allow to cool for 5–10 minutes so the casserole can set before cutting.

Notes

If your biscuits are very large, cut them into sixths instead of quarters.

Avoid adding raw vegetables that contain excess moisture (like tomatoes) unless drained.

Use spicy sausage for extra heat or mild for family-friendly flavor.

Check the center of the casserole to ensure the biscuits are fully cooked—raw dough will look streaky or gummy.
