- 12 ounces bacon
- ⅔ cup brown sugar
- 2 tablespoons chili powder
- Fresh parsley or chives, chopped (for garnish)
Sriracha Mayo
- ¼ cup mayonnaise
- 1 tablespoon sriracha (plus more to taste)
Instructions
- Preheat the Oven
Preheat your oven to 400°F (205°C). Line a baking sheet with foil and place a wire rack on top to allow fat to drain. - Cut the Bacon
Slice each bacon strip into thirds. This creates the perfect size for wrapping around each tater tot. - Prepare the Coating
In a shallow bowl, mix the brown sugar and chili powder until evenly combined. - Wrap the Tater Tots
Wrap each tater tot with a piece of bacon and secure the seam underneath. - Roll in Sugar Mixture
Lightly press each bacon-wrapped tot into the brown sugar mixture until coated. - Arrange on Rack
Place each piece seam-side down on the wire rack. - Bake

Mix mayo and sriracha in a small bowl. Adjust heat to taste. - Serve
