Sweet Potato Crescent Bites combine creamy filling, marshmallows, and pecans in flaky pastry — the ultimate cozy fall treat.


Ingredients

  • 3 medium sweet potatoes (about 1 1/4 lb.), scrubbed clean
  • 1/4 cup packed light brown sugar
  • 2 Tbsp. heavy cream
  • 1/2 tsp. ground cinnamon
  • 1/2 tsp. pure vanilla extract
  • 1/2 tsp. kosher salt
  • 1 (8-oz.) can refrigerated Crescent rolls
  • 3/4 cup mini marshmallows
  • 24 whole pecans
  • 3 Tbsp. maple syrup, for serving (optional)

Instructions

  1. Prepare the sweet potatoes
    Preheat oven to 375°F (190°C). Lightly grease a baking sheet with cooking spray. Pierce sweet potatoes several times with a fork, then bake directly on the rack for 45–50 minutes, or until soft. Cool slightly, then scoop out the flesh into a bowl.
  2. Mash the filling
    Mash the sweet potato flesh with brown sugar, heavy cream, cinnamon, vanilla, and salt until smooth and creamy. Taste and adjust sweetness if needed.
  3. Prepare the crescent dough
    Unroll the crescent dough and separate it into 8 triangles. Cut each triangle in half to make 16 smaller ones. Arrange them on a lined baking sheet.
  4. Add the filling
    Spoon about 1 tablespoon of the sweet potato mixture onto the wider end of each triangle. Top with a few mini marshmallows and one pecan.
  5. Fold and roll
    Gently roll up each triangle, starting from the wide end toward the tip, encasing the filling. Pinch the edges slightly to seal and prevent leaking.
  6. Bake
    Bake for 12–15 minutes, or until golden brown and puffed. Let cool for 5 minutes before serving.
  7. Serve and drizzle
    Drizzle lightly with maple syrup if desired, and serve warm for the ultimate holiday treat.

Notes

For extra texture, sprinkle a bit of crushed pecan or brown sugar on top before baking.

You can prepare the sweet potato mixture up to 2 days in advance — just refrigerate until ready to assemble.

Swap marshmallows for a small cube of brie or cream cheese for a savory twist.

Leftovers taste delicious reheated in the air fryer for 2–3 minutes.
