- 3 medium sweet potatoes (about 1 1/4 lb.), scrubbed clean
- 1/4 cup packed light brown sugar
- 2 Tbsp. heavy cream
- 1/2 tsp. ground cinnamon
- 1/2 tsp. pure vanilla extract
- 1/2 tsp. kosher salt
- 1 (8-oz.) can refrigerated Crescent rolls
- 3/4 cup mini marshmallows
- 24 whole pecans
- 3 Tbsp. maple syrup, for serving (optional)
Instructions
- Prepare the sweet potatoes
Preheat oven to 375°F (190°C). Lightly grease a baking sheet with cooking spray. Pierce sweet potatoes several times with a fork, then bake directly on the rack for 45–50 minutes, or until soft. Cool slightly, then scoop out the flesh into a bowl. - Mash the filling
Mash the sweet potato flesh with brown sugar, heavy cream, cinnamon, vanilla, and salt until smooth and creamy. Taste and adjust sweetness if needed. - Prepare the crescent dough
Unroll the crescent dough and separate it into 8 triangles. Cut each triangle in half to make 16 smaller ones. Arrange them on a lined baking sheet. - Add the filling
Spoon about 1 tablespoon of the sweet potato mixture onto the wider end of each triangle. Top with a few mini marshmallows and one pecan. - Fold and roll
Gently roll up each triangle, starting from the wide end toward the tip, encasing the filling. Pinch the edges slightly to seal and prevent leaking. - Bake
Bake for 12–15 minutes, or until golden brown and puffed. Let cool for 5 minutes before serving. - Serve and drizzle
Drizzle lightly with maple syrup if desired, and serve warm for the ultimate holiday treat.
Notes
For extra texture, sprinkle a bit of crushed pecan or brown sugar on top before baking.
