  • 2 lb hot breakfast sausage
  • 1 (30-32 oz) bag frozen tater tots
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup mozzarella cheese
  • 8 eggs
  • 2 cups milk

Instructions

  1. Preheat the Oven: Set your oven to 350°F (175°C). Grease a 9×13-inch baking dish lightly with butter or non-stick spray.
  2. Cook the Sausage: In a large skillet over medium heat, cook the breakfast sausage until fully browned, breaking it into small crumbles as it cooks. Drain any excess fat.
  3. Layer Tater Tots: Spread half of the frozen tater tots evenly in the bottom of the prepared baking dish.
  4. Add Sausage: Spread the cooked sausage evenly over the tater tots.
  5. Season & Cheese: Sprinkle the salt, pepper, garlic powder, and onion powder over the sausage layer. Top with shredded cheddar and mozzarella cheeses.
  6. Prepare Egg Mixture: In a large bowl, whisk together the eggs and milk until fully combined. Pour the mixture evenly over the casserole.
  7. Top with Tater Tots: Arrange the remaining tater tots over the top of the egg mixture. Sprinkle with a bit more cheese if desired.
  8. Bake: Cover with foil and bake for 45 minutes. Remove foil and bake an additional 20-25 minutes, or until the eggs are fully set and tater tots are golden brown.
  9. Cool & Serve: Allow the casserole to cool for 5-10 minutes before slicing. Serve warm.

Notes

For extra crispiness, broil for 2-3 minutes at the end of baking.

Make-ahead tip: Assemble the casserole the night before and refrigerate. Bake it in the morning for a stress-free breakfast.
